1/4 cup fresh lemon juice
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon Dijon mustard
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme

1/2 teaspoon salt
Instructions
Combine all ingredients in a small bowl. Whisk them together until the mixture emulsifies slightly.
Place 1.5 to 2 pounds of chicken (breasts or thighs) into a large, resealable plastic bag or a shallow dish.
Pour the entire chicken marinade mixture over the chicken. Seal the bag or cover the dish.
Massage the marinade into the chicken to coat all surfaces evenly.
Refrigerate the chicken for at least 30 minutes. For the best results and maximum juiciness, marinate for 4 to 6 hours, or up to 12 hours. Do not marinate longer than 12 hours due to the lemon juice.
Remove the chicken from the marinade before cooking. Discard the remaining marinade.
