Ingredients
Scale
1 cup crushed chocolate sandwich cookies (like Oreos)
1 cup prepared chocolate whipped topping (or homemade whipped cream)
Chocolate shavings, for garnish
Instructions
Prepare the crust layer: Mix the crushed cookies and melted butter in a bowl. Press this mixture evenly into the bottom of a large glass trifle bowl. Chill for 15 minutes.
Make the cheesecake layer: In a medium bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth. Beat in 1/4 cup of the Baileys Irish Cream liqueur until just combined. Set aside.
Prepare the whipped cream: In a separate chilled bowl, whip the heavy whipping cream until soft peaks form. Gently fold in the remaining 1/4 cup of Baileys Irish Cream liqueur.
Assemble the pudding layer: Prepare the instant chocolate pudding according to package directions, using the cold milk. Once slightly thickened, gently fold in the chocolate whipped topping.
Layer the trifle: Spread half of the cheesecake mixture over the chilled cookie crust. Top with half of the chocolate pudding mixture. Carefully spread half of the Baileys whipped cream over the pudding layer.
Repeat the layers: Add the remaining cookie mixture (if you want more crunch throughout, otherwise skip this step), followed by the remaining cheesecake mixture, the remaining pudding mixture, and finally the remaining Baileys whipped cream.
Chill: Cover the trifle bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the layers to set.
Serve: Before serving this decadent chocolate dessert, garnish the top with chocolate shavings.
Notes
You can make individual trifles in small glasses for easier serving at a party.
For an extra boozy dessert, lightly brush the cookie layer with a small amount of plain Baileys before adding the first filling layer.
If you prefer a richer chocolate flavor, use chocolate wafer cookies for the crust.
